Vegan Egg Salad (Mercy For Animals)

I am posting this delicious Vegan Egg Salad recipe I found thanks to Mercy For Animals because it is absolutely delicious and easy to make, and I want to share it with the world!


Ethical reasons aside, I always had some sensitivity to eggs, so I never really got to enjoy them anyways. This alternative tastes just like a classic egg salad, so much so, that it actually blew my mind.


I did change a few things however. I did not have turmeric or onion powder, but I did add a few of my favorite spices that I had on hand. I also almost doubled the onion and celery because for the amount of tofu, I felt it would've been too bland without more - also I just really love my veggies!

Vegan Egg Salad (from Mercy For Animals)

Ingredients:

  • 1 package extra firm tofu, cubed⠀

  • 1 to 2 tablespoons finely chopped onion⠀

  • 2 to 3 tablespoons finely chopped celery⠀

  • 1 teaspoon finely chopped fresh dill (or to taste)⠀

  • 2 teaspoons finely chopped fresh parsley (or to taste)⠀

  • ⅓ cup mayo⠀

  • 1 tablespoon yellow mustard⠀

  • ½ teaspoon turmeric⠀

  • 1 teaspoon onion powder⠀

  • 2 tablespoons nutritional yeast⠀

  • 1 teaspoon lemon juice⠀

  • Pinch black pepper and sea salt⠀

  • Black salt, to taste (optional).

Directions:⠀ In a bowl, mash all ingredients until well mixed. Then sprinkle some paprika on top. ⠀ For best results, chill for at least 1 hour in the fridge before enjoying!
